Don't forget the Vodun, Santaria and related traditions.  Roughly 
speaking they're "syncretic" religions with a mixture of West African 
regligions, Catholicism, and some native American beliefs.  It's easy to 
get stuck on the whole Zombie/voodoo doll stuff, but those things are 
actually a very small part of the overall tradition.

Neil Gaiman's books, _Anasazi Boys_ and _American Gods_, also do a 
pretty good job of presenting "modern day American" gods.
