If you want a nice, Eurocentric-but-not-out-malice-or-unrecognized-ignorance book that covers many bits of things, try Hermaphrodeities: A Transgender Spirituality Workbook.  Also, Cassell's Encyclopedia of Queer Myth and Spirit (which is actually perhaps even a better source)
