Just got back from No Country, great film.

As a preface, sometimes it's good to run Chigurh as plain old badass
mundanes. In this case, one with a great amount of unusual skills.

But if we're going supernatural, then I'd say he's definitely a dark stalker.
Intellegent, educated, casually professional, all traits associated
with the archetype.
(He's even got a signature weapon, which I think would be a powerful symbol.)

That's part of his professional nature. That and the series of deals
he's making ("You didn't see me.") and promises he's keeping all the
way though the film.
As Wells notes, he's heavily principled, which raises him above being
a mere gun-for-hire.

The coin toss is likely a personal tic, but you could say it's his way
creating deals and promises for him to keep, to emphasise this element
of his Archetype interpretation.
